The terrain has a good fertility with excellent drainage.
“We have made some significant choices such as opting for a low-trained spurred cordon cultivation system so that the grapevines can benefit from the earth's warmth as much as possible. We have also found the right cultivation balance by planting no more than 6,000 vines per hectare, and never make use of drip irrigation systems, as it is prohibited by the rules and regulations of the Chianti Classico Denomination.”

Chianti Classico from 49 hectares of vineyards is fermented and aged in the seventeenth century cellars located in the large rooms that had been built beneath the garden. The olive oil mill is also located here as well as possibly one of the largest and oldest olive oil jar stores in the Chianti area. The Chianti Classico DOP Extra Virgin olive oil made from hand picked olives from 13,000 trees is pressed within twelve hours of harvest and is certified as organic by the QC&I.
